Target Group:
Appropriate for those working in all food businesses at supervisory level and who need a better understanding of food hygiene. Owners and managers in small to medium sized organisations many also find this qualification provides them with useful knowledge to do their job more effectively.
Objectives:
At the end of this qualification candidates will be able to:
  • Play an active part in monitoring food hygiene standards and be able to assist in hazard analysis programmes
  • Be involved in training activities, especially on-the-job training
  • Be equipped to effectively supervise food handlers on hygiene issues
Course Content:
  • Bacteriology, physical, chemical and microbial contamination of food and its prevention
  • Food storage, temperature control and food preservation
  • Design and construction of food premises and equipment
  • Cleaning and disinfection, pest control and personal hygiene issues
